Distilling tradition Distilling tradition in Greece goes back to historic times. It is assumed that distilling was initially developed when the alembic was invented in the 16th century BC at the height of the Mycenaean civilisation and with the development of copper processing. It was kept as a domestic product through the centuries, mainly by winemakers who passed on their secrets orally. It was further developed in the Byzantine years by Mount Athos monks, to reach our days, where a variety of distils and beverages is available all over Greece, all linked to local tradition.
